Perfect Pizza in the Ooni Karu Pizza Oven: A Guide to Enjoying Nature

Welcome to our vacation cabin, where you have the opportunity to use the Ooni Karu Pizza Oven. The Ooni Karu Pizza Oven is perfect for those who love spending time in nature with family or friends while enjoying a delicious homemade pizza. Using wood or charcoal for fuel gives the pizza a unique wood-fired flavor that is truly exceptional.

Day 1:

Take your time to prepare a pre-fermented dough (water and flour in equal parts with some yeast and honey). This is a “poolish” used to start bread. It’s best to prepare this dough a day in advance.

– 200g water
– 5g yeast
– 5g honey
– 200g “00” flour or “Type 550” flour

Mix all the ingredients and let the dough sit at room temperature for 1 hour. After that, refrigerate it for 16 to 24 hours, but no longer than 24 hours.

Day 2:

On the second day, use the pre-fermented dough to make the actual pizza dough.

Start by mixing the pre-fermented dough with all the flour, and gradually add the water with dissolved salt.

– Place the pre-fermented dough in a large bowl.
– 500g “Type 550” flour
– 300g water
– 20g salt

Spread everything on your work surface and press the dough apart. Shape it into a ball and let it rest for 15 minutes while brushing it with some olive oil.

Use a specific technique you can find in the video to shape it into a ball once more. Cover it with a towel and let it rest for 1 hour. During this time, you can prepare the tomato sauce.

You can also preheat the pizza oven now. Use small pieces of wood and fire starter to ensure the fire chamber burns continuously for 20 minutes. After 20 minutes, the oven should have reached a temperature of 450°C.

Shape smaller dough balls and spread them on a layer of flour. Push from the center to the edge to create an airy crust, leaving the edge slightly thicker. Now, top your pizza and slide it into the oven using a pizza peel. Be careful, as your pizza can be ready in as little as 90 seconds.
